This is a simple sandwich for the part of the year when your body craves something warm, rustic and comforting. It utilizes apples and bitter greens, some of autumn and winter’s most delightful yield, paired with smoky ham and melty brie. It gets toasted with both mayo and butter for optimal flavor and golden brown color.
Makes: 2 sandwiches
Ingredients:
1 tsp whole grain mustard
2 tsp honey
1 tsp olive oil
1 tbsp mayonnaise, plus more
1/4 tsp salt
1/4 tsp freshly cracked black pepper
8 leaves of radicchio
4 slices of rustic sourdough
6 thick slices of smoked ham
1 apple, thinly sliced
4 long slices of brie
Flaky salt
Butter
Whisk together the mustard, honey, olive oil, mayonnaise, salt and pepper, and set aside.
Heat a large pan to medium, add a drizzle of olive oil followed by the radicchio and a sprinkle of salt. Cook until tender, about 4 minutes. Transfer to a plate.
Spread mayonnaise on one side of each piece of sourdough and place them mayo-side down. On one piece of bread, layer honey mustard dressing, followed by 4 leaves of radicchio, three slices of ham, a layer of thinly sliced apples and two slices of brie. Top with another slice of sourdough, mayo facing out. Repeat with the second sandwich.
In a pan heated to medium-low, add a small pat of butter followed by the sandwich. Place something heavy, like a cast iron skillet on top of the sandwich to press it firmly against the hot pan. Cook for 2 minutes or until golden brown, flip and repeat.
Repeat with the second sandwich, slice and enjoy!
