My fondness for pancakes began a couple years ago as a part of the beautifully unfolding process of becoming exactly like my mother. Surprisingly unmoved by food (in contrast to her daughter), there are very few dishes she craves. Pancakes are one. Without any warning or pretense, I was taken by the same cravings one weekend, and I’ve been making pancakes on a regular basis since.
While there’s nothing wildly unique about this recipe, there’s a few tips that yield truly exceptional results. These instructions will serve as a starting point, but of course, you can customize with flavors and mix-ins as you like. I’ll suggest a few of my favorites at the end.
