For many years of my life, I was a lover of a thick, spreadable hummus —something with fortitude and grit, but in recent years, every memorable encounter I’ve had with the dip has been at old school Middle Eastern groceries and restaurants where they make it light as a cloud and smooth as velvet. Realizing this texture was totally superior, I set out to rewrite my own recipe until I settled on the perfect one.
